Ingredients

  • Lean ground beef - for hearty beefiness. In place of ground beef, substitute with ground turkey or Italian sausage.
  • spaghetti sauce or marinara sauce - using pre-made sauce makes this meal quick work!
  • onion, garlic and mushrooms - for freshness. Although the recipe doesn't call for it, fresh spinach would be a great addition.
  • beef broth - adds richness to this hearty soup. In a pinch use chicken broth.
  • Italian herbs - dried Italian seasoning to add some extra spices to develop the flavor.
  • fire-roasted tomatoes - you can use diced tomatoes if you prefer.
  • a few dollops of ricotta cheese - for traditional flavor and cheesiness! You can substitute with cottage cheese or cream cheese. I've even used heavy cream which makes it super rich.
  • Pasta - use your favorite type of pasta. I prefer a smaller pasta, so it easily fits on a spoon.
  • optional garnish - pepper jack cheese, parmesan cheese, thinly sliced fresh basil.

Instructions

This is an overview of the instructions for the creamy lasagna soup recipe. For the complete directions just scroll down to the bottom!

  1. In a large pot or Dutch oven over medium heat, brown the ground beef and drain - season with Italian seasoning.
  2. While it's cooking, dice the onion, mince the garlic and slice the mushrooms.
  3. Brown ground beef, drain excess fat, add the chopped onion and sliced mushrooms and sauté. Next, add the garlic.
  4. Add the spaghetti sauce, tomatoes, beef broth and water, then simmer for 30 minutes.
  5. Bring to a boil and add the pasta - cook until al dente.
  6. Remove from heat and stir in the creamy ricotta cheese. Stir until melted - serve and enjoy!

What pasta works best?

Almost any type of small pasta will work for this recipe.

Can lasagna soup be frozen?

Yes, you can freeze lasagna soup, it freezes great! Ladle out a quart prior to your meal and place in the freezer. You'll be thankful for those days you don't feel like cooking!

How long does it take to make easy lasagna soup?

About an hour from start to finish. This includes dicing the vegetables, sautéing the beef and bringing it all together.

Why is lasagna so good?

Lasagna is great because it's the perfect combination of savory and creamy. It's all the flavors in one and after it sits a day. or two it tastes even better!

Variations

  • Add spice to the soup by adding a pinch of red pepper flakes.
  • If you'd prefer, instead of ground beef use boneless skinless chicken breast.
  • Use Alfredo Sauce instead of marinara sauce and make a creamy white lasagna soup instead!
  • Add chopped vegetables or baby spinach to the soup - delish!

Tips

Here are some examples of pasta to use in this one-pot lasagna soup recipe.

  • Campanella pasta - which has a tube shape with ruffled edges and closely resembles lasagna noodles - great choice!
  • conchiglie - more often known as shells or seashell pasta, inexpensive and readily available
  • orecchiette - a small pasta about the size of your finger shaped like a cup, it collects the sauce and cheese perfectly!
  • farfalle - bow tie pasta, always tasty and fun.
  • macaroni - affordable and easily available.
  • broken lasagna pasta - although this pasta will work, it's not the best choice.

All of these varieties of pasta are great options! My favorite would be conchiglie closely followed by orecchiette pasta.

I like these because they both are shaped so they catch the sauce and make each spoonful that much more flavorful.

Believe it or not, the pasta I least prefer are the lasagna noodles. Even if you break them up, the pieces are such that they won't fit onto your soup spoon. Also because they are all different sizes and shapes they won't cook evenly. When some pieces are done, others will be overdone.

Storage

Refrigerate - Store leftover in an airtight container. Refrigerate up to four days.

Freezer - Leftover soup freezes great, up to three months.

Thaw overnight in the refrigerator, leftovers heat well in the microwave or on the stovetop. Enjoy!

One Pot Lasagna Soup

This easy soup has a rich tomato broth. It's your favorite casserole in soup form! The perfect comfort food.

Ingredients

  • 1 pound ground beef
  • 1 yellow onion diced
  • 4 cloves garlic
  • 1 24 oz. spaghetti sauce
  • 8 oz mushrooms sliced
  • 1 teaspoon Italian seasoning
  • 1 14.5 oz fire roasted tomatoes
  • 1 ½ cup water
  • 1 14.5 oz can beef broth
  • 1 cup mini uncooked lasagna noodles or your favorite small pasta
  • 1 cup ricotta cheese

Instructions

  • Brown the ground beef, drain if desired.

  • Add the Italian seasoning, sliced mushrooms and diced onions. Saute for 10 minutes. Add the garlic, saute for another minute or so. Just until the garlic is fragrant.

  • Now add the liquid, pasta sauce, fire roasted tomatoes and beef broth. Stir well to combine.

  • Increase the heat and bring it to a boil, cover loosely and simmer for 30 minutes.

  • Add the pasta and cook uncovered until the pasta is al dente. remove from heat, stir in the ricotta cheese. Top with shredded mozzarella if desired.

Recipe backstory

Lasagna is one of our favorite meals, but I confess, I don't make it often. In fact, I even tried a shortcut and got frozen lasagna and made the mistake of telling my (Italian) friend Michelle what I did, boy did I get chewed out!

Michelle makes the BEST lasagna and shortly after buying the frozen lasagna (and the confession) we visited her. And of course she made homemade lasagna.

It is rich and cheesy, perfectly layered with homemade sauce and fresh pasta. Did I tell you Michelle is Italian? Oh that meal was heavenly!

There is nothing like having an AMAZING home cooked meal when you're on a road trip, right?

I can't match her tasty meal, so instead I'm making it my way; into an easy delicious soup!
