Peanut Butter Chocolate Chip Cookie Bars Recipe (1)

Now that I am officially outnumbered with three kids, I am all about convenience.

I love making cookie bars because they are just as easy to whip up as a batch of cookies but you just spread the dough in the pan and bake them, rather than baking a batch of cookies at a time.

I love anything chocolate and peanut butter and these bars were no exception.

If you know of, or are, a chocolate peanut butter loving fan, we highly recommend this recipe.

could i make this recipe using crunchy peanut butter?

We used creamy peanut butter for this recipe but you could easily use crunchy peanut butter. You could also use creamy peanut butter and add some lightly salted peanuts (we recommend crushing them up a bit) for a little bit of texture.

I prefer them without the extra nuts, but my husband loves when they have a little crunch to them.

how to press them into the pan:

For this recipe, we recommend not pressing the dough fully into the edges of the pan. Instead, you will want to leave about a 1/2 inch gap, because as they bake, they spread out a little bit.

If you don’t, it will create a large lip when it’s pressed against the edges. If you are a crust person, you could do that, but we recommend leaving a gap between the edge of the bars and the pan.

would frosting be good on these?

I am in love with our Lunch Lady Peanut Butter Bar recipe, because of the peanut butter and chocolate frosting layers.

These bars are a little more rich because of the chocolate chips, but you could definitely top them off with a thin layer of peanut butter, or our rich chocolate frosting from our peanut butter bars.

You could also replace the chocolate chips with M & M’s, peanut butter chips, caramel chips, butterscotch chips, candy pieces, etc.

  3. dc says:

Looks yummy! How do you keep them so flat...I end up with couch cookies (as my kids call them) around the edges.

  4. Ashton says:

These look like total comfort food! I could just dive right in!!! Pinned :)

  5. Sarah says:

Getting ready to try these but your instructions don't mention when to add the butter. I'm going to assume you just mix it in with the other ingredients (minus the chocolate chips). Here we go! They look yummy.

  6. Jacqui says:

I love peanut butter and I am always looking for new things to make with it. I am adding this to my list.

You did it right! Thanks for letting us know! We added that into the directions.

  8. Cyd says:

When you spread the dough out in the pan, don't go quite to the edge because they spread out while baking! Leave about a 1/2 inch gap around the whole edge of the pan. See if that will help.

  9. Rachel says:

These are so delicious! I actually made them gluten free just by switching out the flour and adding a 1/2 teaspoon xanthan gum. These are now a staple in my recipe book! Thanks so much for this amazing recipe!!! :)

I just made these today for the office and they were gone so quick! Really simple recipe- I will definitely make these again!

  11. Lea Hatch says:

These will be in my oven ... and then at the office ....thinking to add a bit of crisped bacon to the mix as well.

These looks like perfection. I love bar cookies too for being quick to make, just cut into squares. These look riddled with chocolate chips and it's almost like there is a peanut butter crust. YUM!

  13. Cyd says:

Oh my goodness! There is something about this new bacon craze! That sounds delicious!

  14. Beth S says:

The kids and I made these to take to a friend's house and they were a huge hit for all! Super easy to make and really delicious!

  15. Heather says:
