I personally love breakfast for dinner.

Ingredients

You will need the following ingredients to make tater tot breakfast casserole.

  • tater tots
  • eggs
  • breakfast sausage-I use pork breakfast sausage for this recipe. You can substitute with turkey or chicken breakfast sausage. You can also cut up breakfast sausage links. If you want to change things up, you can substitute chopped ham or bacon.
  • heavy cream- You can substitute with whole milk.
  • red pepper-Yellow or orange peppers are good substitutes.
  • bell pepper-You can omit if you do not like bell pepper. For added spice, you can substitute with a drained can of green chile or a few jalapenos.
  • onion-I used yellow onions, but you can use green, white, or red onions for this recipe.
  • cheddar cheese-I prefer sharp cheddar. You can use mild or medium cheddar.
  • pepper jack cheese-This gives the breakfast casserole a little kick in heat and flavor. If you do not want the added spice, you can use Monterrey Jack cheese or all cheddar.

How to make tater tot breakfast casserole

Follow these simple steps to make tater tot breakfast casserole.

  1. Preheat oven to 350 degrees. Grease a 9x 13 baking dish. Add tater tots to the bottom of the baking dish until a full layer is formed and the bottom is completely covered.
  2. In a skillet, brown the breakfast sausage. Add in the bell pepper, red bell pepper, and onion cook together until everything is fully cooked. Drain any excess grease.
  3. Layer cooked breakfast sausage mixture over the tater tots.
  4. In a mixing bowl, mix cheddar and pepper jack cheese together.
  5. Layer half of the cheese over the sausage. Then refrigerate the other half of cheese for later.
  6. In a mixing bowl, mix eggs, heavy cream, and salt and pepper.
  7. Pour egg mixture over the cheese. Cover the casserole with foil. Bake for 35 minutes.
  8. Remove the casserole from oven and remove foil. Add remaining cheese. Then bake an additional 20 to 25 minutes until center egg filling is completely cooked and cheese is melted. Rest 5 to 10 minutes before serving.

  • 8 ounces cheddar cheese shredded
  • 4 ounces pepper jack cheese shredded
  • salt and pepper to taste
