  • 6 roma tomatoes, diced
  • 2 cloves garlic, chopped
  • 2 cloves garlic, peeled
  • 3 tablespoons olive oil
  • 2 14 teaspoons balsamic vinegar
  • 2 tablespoons chopped fresh basil
  • 12 teaspoon kosher salt
  • 14 teaspoon fresh cracked pepper
  • 8 slices Italian bread, cut about 1 inch thick
  • 2 tablespoons grated parmigiano-reggiano cheese

directions

  • Whisk together chopped garlic, vinegar, salt, pepper, and basil.
  • When combined slowly drizzle in oil.
  • Add tomatoes and let sit for 20 minutes at room temp.
  • Meanwhile back at the bat cave, toast the bread.
  • This can be done either in the toaster (if it's got really wide slots) or under the broiler (if using this method watch closely so it doesn't become a brickette).
  • When the bread is toasted rub each piece, on one side, with the whole garlic pieces.
  • Place the bread on a cookie sheet and top with tomato mixture.
  • Sprinkle on a little cheese and broil till the cheese melts (you can skip that last broiling bit and it's equally as wonderful).
  • Serve immediately.
  • The tomato mixture also makes a wonderful vinegrette for an antipasto salad.
  • Enjoy!

  2. Delicious bruschetta!!! What an amazing, tasty appetizer & so easy to pull together. Your family or guests will be amazed because this bruschetta is equal, if not better than any you will find prepared by the best Italian restaurants. I made some simple adjustments by adding 1/3 cup of finely diced red onion & also upped the balsamic to 1 tablespoon. For the best taste, use the finest EXTRA virgin olive oil you can find (or afford!) & you will feel like you are in Italy!

  5. Excellent recipe. I've made it several times. I've even thrown in a few extra veggies (celery, cucumber, etc) and made the sauce into pasta salad. Actually, I think the sauce would make good Italian dressing, too.<br/><br/>Very versatile and good!

  1. Thanks for the excellent recipe. I added one small chopped onion and used a full tablespoon of vinegar. I also tossed the tomato mixture with 1/4 c. Parmesan instead of broiling the bread. This will certainly appear on our table again!

  2. Yummyyyy this is very good and easy bruschetta and it s going to be repeated in our house many other times.I used 2 teaspoon dried basil instead of 2 tablespoon fresh basil and instead of kosher salt i used normal salt. Thanks for posting.

  3. YUMMM I used grape tomatoes instead of romas because that's what I had on hand, but I have to say I'd make it the same way again. Took advice from another user and used garlic powder on bread instead of rubbing garlic onto the bread. Very good recipe - will definitely use over and over. Thanks for posting!

  4. These were great! I cheated a little was I was running out of time and used Olive Oil spray and garlic powder on the toast instead of rubbing it with garlic and it was still great. I'll try it with rubbing the fresh garlic on next time. Thanks for the great recipe!
