Ingredients you need for the Healthy Spinach Chicken Salad

2 cups dicedcooked chicken tenders(we used rotisserie chicken)2 cups freshspinach, chopped1 cup ricedcauliflower1/2 cup choppedred onionSaltand fresh crackedpepper, to taste1/2 cupdried cranberries1/2 cup chopped almonds1/2 cup gratedparmesan2 tablespoonsolive oil1/2 cupchipotle mayonnaise1 tablespoon heavy whipping cream1 teaspoon fresh grated ginger

Directions

1. To make the chicken spinach cauliflower salad:In a large salad bowl, combine spinach, cauliflower rice, cranberries, almonds, parmesan, and diced chicken.

2. Combine chipotle mayo, olive oil, heavy cream, and grated ginger in a small jar and drizzle over the chicken salad, then toss to combine.

Tips for making easy healthy lunches

  • You can prepare most of the salads ahead of time: cut dry ingredients (veggies, cheese, nuts, cooked meat etc…) and keep them in an airtight container. Then add the wet ingredients at the last minute or when you pack up your meal preps containers: citruses, avocado, dressings, oil, vinegar etc…
  • Plan for the coming week: most of our lunch recipes can be kept in the refrigerator for up to 2 or 3 days, so you can take some time during the weekend to prepare your weekly lunches.
